Instructions
Preheat your oven to 375°F (190°C).
Place the sliced tomatoes on a paper towel to drain excess juice
In a bowl, mix the mayonnaise, grated cheese, chopped basil, salt, and pepper.
Arrange a layer of tomatoes in the pie crust, then spread a layer of the mayonnaise mixture on top.
Repeat the layers, ending with the mayonnaise mixture on top.
Bake the pie for 30-35 minutes until the top is golden brown.
Let it cool slightly before slicing and serving.
Store any leftover tomato pie in the refrigerator for up to 2 days. Reheat in the oven to maintain the crust's crispiness.
You can make this gluten free by using a gluten free pie crust
