Slow Cooker Ham and Beans

Slow Cooker Ham and Beans
Ingredients
- 1 lb package dried northern beans or whatever bean you like
- 1 ham bone hocks, shanks or diced ham (about 1 pound) I have also used a big piece of ham and chopped some for the recipe, and baked the rest in the oven for slicing
- 2 tsp onion powder
- 6 cups water * see notes
- pinch of baking soda takes some of the foam out
- 2 carrots diced ( i love carrots in mine bur leave off if you wish)
- pinch thyme
- salt and pepper to taste
Instructions
- Sort and rinse beans. In a large bowl, cover beans with water and soak overnight. ( I prefer to soak, but some just add right to pot)
- In the morning, drain beans. Discard the soaking water.
- Add all ingredients to slow cooker
- Cover. Cook on low 7-8 hours, or high 4 hours.
- If using ham bone, remove, allow to cool and cut off ham to put back in the beans.
Notes
I also have made with chicken broth and I like using it either half with water and half chicken broth or all chicken broth
