Prepare the pork chops: Remove from the fridge 20 minutes before cooking. Pat dry and season both sides with salt, pepper, and smoked paprika.
Heat the skillet: Place a cast iron skillet over medium-high heat and add olive oil. Let it heat until shimmering.
Sear the pork chops: Add the pork chops to the skillet and sear for 3-4 minutes without moving them, until golden brown. Flip and cook for another 3-4 minutes.
Baste with garlic butter: Reduce heat to medium-low. Add 2 tablespoons of butter, minced garlic, and thyme. Tilt the skillet and use a spoon to baste the pork chops continuously for 2-3 minutes.
Remove chops to plate and cover
Once pork chops are removed, ass the chicken broth to hot skillet and scrape the pan to get all the bits from the pork chops
Check for doneness: Use a meat thermometer to ensure the internal temperature reaches 145°F (63°C).
Rest and serve: Remove from heat, let rest for 5 minutes, then serve with a squeeze of lemon juice.
