Buttery Garlic Cast Iron Skillet Pork Chops

I admit, I love the combo of garlic and butter so I thought this time I would toss in a few pork chops too! Juicy, golden-brown pork chops seared in a cast iron skillet and basted with garlic-infused butter for a restaurant-quality meal. This quick and easy recipe delivers incredible flavor in under 20 minutes. This is so easy! I grow all the herbs in my garden and often times use rosemary instead of the thyme, or sometimes, I use both!

Buttery Garlic Pork Chops

Ingredients
  

  • Ingredients:
  • 4 bone-in pork chops about 1-inch thick
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • 3 tablespoons butter divided
  • 3 cloves garlic minced
  • ½ teaspoon dried thyme I use fresh in the summer
  • ½ teaspoon smoked paprika I like smokey paprika
  • ½ cup Chicken Broth or water

Instructions
 

  • Instructions:
  • Prepare the pork chops: Remove from the fridge 20 minutes before cooking. Pat dry and season both sides with salt, pepper, and smoked paprika.
  • Heat the skillet: Place a cast iron skillet over medium-high heat and add olive oil. Let it heat until shimmering.
  • Sear the pork chops: Add the pork chops to the skillet and sear for 3-4 minutes without moving them, until golden brown. Flip and cook for another 3-4 minutes.
  • Baste with garlic butter: Reduce heat to medium-low. Add 2 tablespoons of butter, minced garlic, and thyme. Tilt the skillet and use a spoon to baste the pork chops continuously for 2-3 minutes.
  • Remove chops to plate and cover
  • Once pork chops are removed, ass the chicken broth to hot skillet and scrape the pan to get all the bits from the pork chops
  • Check for doneness: Use a meat thermometer to ensure the internal temperature reaches 145°F (63°C).
  • Rest and serve: Remove from heat, let rest for 5 minutes, then serve with a squeeze of lemon juice.

Notes:
For extra tenderness, brine pork chops in salt water for 30 minutes before cooking.
Avoid overcooking—use a thermometer for accuracy.
