Chicken Macaroni Casserole The Pickys Will Love

Today was a I need comforting recipe. You know the kind that just give you a hug? This is what I came up with. I have made this many times, but today, well, i changed it up a little! The picky eaters love this, bonus points!!

Chicken Macaroni Casserole The Pickys Will Love!!

Ingredients
  

  • ½ cup chopped onion
  • 3 tablespoons butter or margarine melted
  • 2 cans 10 3/4 ounces each cream of chicken soup
  • 2 cups shredded cheddar cheese divided
  • 1 cup milk
  • 3 ½ cups chopped cooked chicken
  • 2 ½ cups cooked macaroni
  • ¼ cup Ritz cracker crumbs
  • Salt and pepper to taste

Instructions
 

  • In a large skillet over medium-high heat, sauté onions in butter until tender. Add in soup and 1 1/2 cups cheese, gradually stirring in milk. Cook over medium heat until cheese melts. Stir in chicken and macaroni, then taste and adjust seasoning with salt and pepper. Transfer mixture to a greased 2 1/2 quart casserole dish and sprinkle with cracker crumbs. Bake in a preheated 350°F oven for 30 minutes or until heated through. Top with remaining 1/2 cup cheese and bake for another 5 minutes until the cheese is melted and bubbly.

Notes

Notes: I had to pick some onions from the garden early, so I used those! I also decided to use the broth from boiling the chicken. This is so versatile. I have tried it several ways and all were delicious. I am gluten free, check out the gluten free version too
