Country Club Squash Casserole

This recipe comes from my mom and a neighbor on her street. They had this every time the gathered for a pot luck supper. It was a crowd favorite. Those were the days, neighbors said hello, visited, got together for occasions and celebrated life.

Country Club Squash

Ingredients
  

  • 2 lbs Yellow Squash
  • ½ cup Chopped Onion
  • ½ cup Water
  • 1 8 oz Carton Sour Cream
  • ½ tsp Salt
  • 1 cup Soft Bread Crumbs
  • ½ cup Shredded Cheddar Cheese
  • â…“ cup Butter melted
  • ½ tsp Paprika
  • 8 slices Bacon Cooked and Crumbled

Instructions
 

  • Slice Squash not really thin but a nice slice 1/8 inch or so
    2 lbs Yellow Squash
  • Chop onion
    1/2 cup Chopped Onion
  • add water, squash and onion to a pot ( I use a large frying pan)
  • Once you have the ingredients above in the frying pan, stew down until squash is tender.
  • Add squash to casserole mixture to casserole dish
  • stir in the sour cream, salt, pepper
    1 8 oz Carton Sour Cream
  • Mix bread crumbs, cheese, paprika and the melted butter
    1/2 cup Shredded Cheddar Cheese
  • Sprinkle over the top of casserole
  • Bake 300 for 30 minutes
  • Add cooked, chopped bacon on top
