Instant Pot Red Rice and Sausage
Like most other recipes I make, something made me do it! I had made sausage and peppers early in the week and had sausage left. The result is the recipe below! I cook with rice in the instapot all the time. If you have not tried it, you are missing out! So easy!!

I choose to brown everything in a cast iron skillet first, then add to rice in instapot. I do this because I do not like the burn in the pot when you brown in the instapot. I have more control over the outcome in my cast iron skillet

Instant Pot Red Rice and Sausage
Ingredients
- 1 lb smoked sausage cut into 1/2-inch slices
- 1 cup long-grain white rice rinsed
- 1 can 14.5 oz diced tomatoes, undrained
- 1 small onion finely chopped
- 1 bell pepper diced (optional)
- 2 cloves garlic minced
- 1 ½ cups chicken broth
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp dried oregano
- ¼ tsp cayenne pepper optional, for a bit of heat
- Salt and pepper to taste
- 1 tbsp olive oil for sautéing
Instructions
- Sauté the sausage:
- Turn the Instant Pot to “Sauté” mode. Add the olive oil to the pot and let it heat up.
- Add the sausage slices and sauté until browned, about 3-4 minutes. Remove the sausage and set aside.
- Sauté the vegetables:
- In the same pot, add the chopped onion, bell pepper (if using), and garlic. Sauté for 2-3 minutes until softened.
- Add the rice and spices:
- Stir in the rinsed rice, paprika, garlic powder, onion powder, oregano, cayenne pepper (if using), and a pinch of salt and pepper. Cook for about 1-2 minutes to toast the rice lightly.
- Add the liquid:
- Pour in the chicken broth and diced tomatoes with their juices. Stir to combine.
- Pressure cook:
- Add the cooked sausage back into the pot and stir everything together.
- Close the Instant Pot lid, make sure the valve is set to “Sealing,” and select “Manual” or “Pressure Cook” for 10 minutes on high pressure.
- Release the pressure:
- Once the cooking time is complete, allow for a natural pressure release for 5 minutes. After that, switch the valve to “Venting” to release any remaining pressure.
Notes
Serve hot, and optionally garnish with fresh parsley or sliced green onions.
