Blueberry Recipes from My Garden

Blueberries from the garden are amazing! Fresh blueberries, nothing like it! I will be putting recipes together that I use this month. Some recipes will also come from my old recipe books. When blueberries are coming in, we are busy! Our blueberry bushes ripen at different times, which is good! I freeze and bake for over a month!! I eat alot just plain too with yogurt. The pictures below are some of my blueberry bushes. I put the blueberries in jars to save them. I will make a post on that to tell you why i do this.

Blueberry Chia Seed Jam

A jar of blueberry chia seed jam beside slices of toast and fresh blueberries on a kitchen counter.

This blueberry chia seed jam is a delightful way to enjoy the sweet, tart flavor of blueberries from my garden. It’s easy to make, and the combination of blueberries and chia seeds creates a lovely texture, making it perfect for spreading on toast or adding to your favorite yogurt.

The best part? It’s a healthier alternative to traditional jams, with no added sugars. The chia seeds not only help thicken the jam but also boost its nutritional value with omega-3 fatty acids and fiber. You’ll love the vibrant color and fresh taste that brings a little sunshine to your breakfast table.

Ingredients

  • 2 cups fresh blueberries
  • 2 tablespoons chia seeds
  • 2 tablespoons honey or maple syrup (adjust to taste)
  • 1 tablespoon lemon juice
  • 1/4 teaspoon vanilla extract (optional)

Instructions

  1. In a medium saucepan over medium heat, combine the blueberries and honey (or maple syrup). Cook for about 5 minutes, stirring occasionally, until the blueberries start to burst.
  2. Remove from heat and mash the blueberries slightly with a fork or potato masher, leaving some whole for texture.
  3. Stir in the chia seeds, lemon juice, and vanilla extract, if using. Mix well.
  4. Let the mixture sit for 10-15 minutes to thicken. If it’s too thick, you can add a bit of water to reach your desired consistency.
  5. Transfer the jam to a clean jar and refrigerate. It will keep for about two weeks.

This savory blueberry balsamic glaze is a delightful twist for your meals, bringing sweetness and tang together in a simple, yet elegant way. The natural sweetness of the blueberries from my garden pairs beautifully with the rich depth of balsamic vinegar, creating a sauce that’s perfect for drizzling over grilled meats or roasted vegetables. We grilled our chicken that we marinated, then used this sauce. Amazing!! If you have to know the whole truth, I actually have baked the chicken in the sauce too!!
